We are recruiting: we are hiring a head butcher in Madison County, Iowa. You should have: • Knowledge of halal slaughter and handling where required • Clean, presentable and friendly at the counter • Food hygiene / HACCP certificate You will keep HACCP hygiene records and sanitise the block and tools; dress the chilled counter and rotate stock by date; take customer orders and advise on cuts and cooking; debone shoulders, legs and loins with a boning knife; break down beef, mutton and chicken carcasses into primal cuts.
