Ideal candidate: • Able to use a band saw, grinder and sausage filler • Knowledge of halal slaughter and handling where required Your main tasks: • Keep HACCP hygiene records and sanitise the block and tools • Trim fat, sinew and silver skin off the cuts • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Weigh, price and label cuts for the display case Freshers welcome — about 1 years of practice is enough.
