The role involves: • Sharpen and hone knives on a steel and whetstone • Weigh, price and label cuts for the display case • Break down beef, mutton and chicken carcasses into primal cuts • Debone shoulders, legs and loins with a boning knife • Dress the chilled counter and rotate stock by date • Stuff and link fresh sausages with casings You should have: • Comfortable working in cold rooms and chillers • Food hygiene / HACCP certificate Freshers welcome — about 2 years of practice is enough.
