Now hiring: we are hiring a trainee butcher in Lawrence County, Tennessee. You will be based in a supermarket meat department. Day-to-day duties: • Break down beef, mutton and chicken carcasses into primal cuts • Trim fat, sinew and silver skin off the cuts • Season and marinate meat on request • Sharpen and hone knives on a steel and whetstone You should have: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate $27 per hour, negotiable for the right hands.
