Vacancy available: we are hiring a deboner in Kingsbury County, South Dakota. You will be based at a wholesale meat market. The role involves trim fat, sinew and silver skin off the cuts; run the band saw to cut cleanly through bone; monitor chiller and freezer temperatures to keep the cold chain; break down beef, mutton and chicken carcasses into primal cuts; sharpen and hone knives on a steel and whetstone. Requirements: • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry Freshers welcome — about 3 years of practice is enough.
