Your main tasks: • Monitor oven temperature and baking time for each batch • Score the top of loaves before baking • Prove dough in the proofer at the right temperature and humidity • Grease and clean baking trays, tins and moulds You should have: • 2+ years' experience as a baker • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes Freshers welcome — about 3 years of practice is enough.
