We are recruiting: we are hiring a butcher in Bourbon County, Kentucky. You will work in a hotel or restaurant butchery. Requirements: • Food hygiene / HACCP certificate • Comfortable working in cold rooms and chillers • Quick and accurate on the weighing scales and order maths Your main tasks: • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Weigh, price and label cuts for the display case • Vacuum-pack and wrap customer orders • Keep HACCP hygiene records and sanitise the block and tools • Monitor chiller and freezer temperatures to keep the cold chain Rotating shifts. Pay around $4,400 per month, based on your experience. Walk-in interviews this week.
