Great opportunity: we are hiring a head butcher in Yellowstone County, Montana. Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Clean, presentable and friendly at the counter • Food hygiene / HACCP certificate Your main tasks: • Break down beef, mutton and chicken carcasses into primal cuts • Sharpen and hone knives on a steel and whetstone • Weigh, price and label cuts for the display case • Run the band saw to cut cleanly through bone • Dress the chilled counter and rotate stock by date • Keep HACCP hygiene records and sanitise the block and tools Full-time, day shift.
