Head baker — West Feliciana Parish

Great opportunity: we are hiring a head baker in West Feliciana Parish, Louisiana. Day-to-day duties: • Roll out short-crust and biscuit dough • Prove dough in the proofer at the right temperature and humidity • Rotate stock and follow FIFO on raw materials • Monitor oven temperature and baking time for each batch • Grease and clean baking trays, tins and moulds • Pipe and fill cakes, pastries and cream rolls You should have: • Familiar with deck, rack and convection ovens • Accurate at weighing and following recipes Rotating shifts.
