You should have: • Clean, presentable and friendly at the counter • 2+ years experience working as a butcher • Comfortable working in cold rooms and chillers Day to day you will trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts; sharpen and hone knives on a steel and whetstone; weigh, price and label cuts for the display case. 3+ years on the tools preferred.
