Ideal candidate: • Able to work early-morning and night shifts • 2+ years' experience as a baker Day to day you will prove dough in the proofer at the right temperature and humidity; check finished products for colour, crumb and weight; boil sugar syrup for glazes and icing; laminate puff and croissant dough by folding in the butter; weigh and mix flour, yeast, water and salt to the day's recipe; knead and develop dough by hand and in the spiral mixer.
