You should have: • Comfortable working in cold rooms and chillers • Quick and accurate on the weighing scales and order maths • Food hygiene / HACCP certificate Day to day you will trim fat, sinew and silver skin off the cuts; sharpen and hone knives on a steel and whetstone; run the band saw to cut cleanly through bone; mince meat and prepare keema on the grinder; stuff and link fresh sausages with casings; break down beef, mutton and chicken carcasses into primal cuts. 4+ years on the tools preferred.
