You should have: • Quick and accurate on the weighing scales and order maths • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry Day-to-day duties: • Run the band saw to cut cleanly through bone • Keep halal cuts separated and clearly handled • Monitor chiller and freezer temperatures to keep the cold chain • Take customer orders and advise on cuts and cooking • Mince meat and prepare keema on the grinder Freshers welcome — about 5 years of practice is enough.
