The role involves laminate puff and croissant dough by folding in the butter; shape loaves, rolls, baguettes and buns by hand; pipe and fill cakes, pastries and cream rolls; check finished products for colour, crumb and weight. Requirements: • Able to lift 25 kg flour sacks • Knowledge of dough fermentation and proving $2,600 per month, negotiable for the right hands. Six days a week, one day off.
