You should have: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry You will sharpen and hone knives on a steel and whetstone; weigh, price and label cuts for the display case; monitor chiller and freezer temperatures to keep the cold chain; portion steaks, chops and cutlets to the ordered weights; dress the chilled counter and rotate stock by date. 1+ years on the tools preferred.
