On a typical shift you will trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts; vacuum-pack and wrap customer orders; season and marinate meat on request; stuff and link fresh sausages with casings; run the band saw to cut cleanly through bone. Ideal candidate: • Able to identify primal cuts of beef, mutton and poultry • Clean, presentable and friendly at the counter • 2+ years experience working as a butcher At least 4 year(s) in a similar role.
