You should have: • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry • Clean, presentable and friendly at the counter You will weigh, price and label cuts for the display case; keep HACCP hygiene records and sanitise the block and tools; take customer orders and advise on cuts and cooking; run the band saw to cut cleanly through bone.
