We are recruiting: we are hiring a butcher in Logan County, West Virginia. Ideal candidate: • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry • 2+ years experience working as a butcher On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; keep HACCP hygiene records and sanitise the block and tools; mince meat and prepare keema on the grinder; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts.
