Great opportunity: we are hiring a butcher in LaSalle County, Illinois. What we are looking for: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry The role involves: • Take customer orders and advise on cuts and cooking • Keep HACCP hygiene records and sanitise the block and tools • Monitor chiller and freezer temperatures to keep the cold chain • Portion steaks, chops and cutlets to the ordered weights • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date Rotating shifts.
