Immediate opening: we are hiring a head baker in West Carroll Parish, Louisiana. Ideal candidate: • Understanding of food-safety and HACCP basics • Knowledge of dough fermentation and proving On the job you will handle: • Roll out short-crust and biscuit dough • Load and unload the deck oven with a peel • Weigh and mix flour, yeast, water and salt to the day's recipe • Knead and develop dough by hand and in the spiral mixer • Laminate puff and croissant dough by folding in the butter • Score the top of loaves before baking $3,400 per month, negotiable for the right hands. Full-time, day shift. Walk-in interviews this week.
