You should have: • Knowledge of dough fermentation and proving • 2+ years' experience as a baker • Accurate at weighing and following recipes On the job you will handle: • Roll out short-crust and biscuit dough • Load and unload the deck oven with a peel • Proof and fry doughnuts, then glaze them • Shape loaves, rolls, baguettes and buns by hand • Laminate puff and croissant dough by folding in the butter Freshers welcome — about 2 years of practice is enough.
