We are recruiting: we are hiring a dough maker in Whiteside County, Illinois. The job is at a busy bakery. Day to day you will grease and clean baking trays, tins and moulds; boil sugar syrup for glazes and icing; laminate puff and croissant dough by folding in the butter; pipe and fill cakes, pastries and cream rolls; shape loaves, rolls, baguettes and buns by hand; knead and develop dough by hand and in the spiral mixer. Ideal candidate: • 2+ years' experience as a baker • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics $3,500 per month, negotiable for the right hands.
