Your main tasks: • Laminate puff and croissant dough by folding in the butter • Monitor oven temperature and baking time for each batch • Roll out short-crust and biscuit dough • Shape loaves, rolls, baguettes and buns by hand Ideal candidate: • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens Six days a week, one day off.
