You should have: • Able to identify primal cuts of beef, mutton and poultry • Quick and accurate on the weighing scales and order maths On a typical shift you will stuff and link fresh sausages with casings; run the band saw to cut cleanly through bone; season and marinate meat on request; monitor chiller and freezer temperatures to keep the cold chain; mince meat and prepare keema on the grinder; debone shoulders, legs and loins with a boning knife.
