You should have: • Food handler / hygiene certificate • Understanding of food-safety and HACCP basics You will keep work surfaces and equipment clean to food-safety standards; monitor oven temperature and baking time for each batch; knead and develop dough by hand and in the spiral mixer; pipe and fill cakes, pastries and cream rolls; weigh and mix flour, yeast, water and salt to the day's recipe.
