You should have: • Able to read and follow recipes and dockets • Familiar with North Indian, tandoor and continental cooking On a typical shift you will follow cleaning schedules and wash down work surfaces; prepare stocks, sauces and soups from scratch; prepare the mise en place before each service; taste and adjust seasoning for consistency; manage the tandoor and skewer kebabs. $190 per day, negotiable for the right hands.
