The role involves: • Sharpen and hone knives on a steel and whetstone • Stuff and link fresh sausages with casings • Keep HACCP hygiene records and sanitise the block and tools • Weigh, price and label cuts for the display case • Season and marinate meat on request • Dress the chilled counter and rotate stock by date Ideal candidate: • Clean, presentable and friendly at the counter • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required At least 2 year(s) in a similar role.
