Ideal candidate: • Confident knife skills and safe blade handling • Physically fit to lift carcasses and stand all day Day to day you will trim fat, sinew and silver skin off the cuts; portion steaks, chops and cutlets to the ordered weights; season and marinate meat on request; weigh, price and label cuts for the display case; stuff and link fresh sausages with casings; debone shoulders, legs and loins with a boning knife.
