Immediate opening: we are hiring a sausage maker in Westchester County, New York. The job is in a hotel or restaurant butchery. You will stuff and link fresh sausages with casings; keep halal cuts separated and clearly handled; portion steaks, chops and cutlets to the ordered weights; mince meat and prepare keema on the grinder; keep HACCP hygiene records and sanitise the block and tools; monitor chiller and freezer temperatures to keep the cold chain. Requirements: • Confident knife skills and safe blade handling • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry At least 5 year(s) in a similar role.
