Ideal candidate: • 2+ years experience working as a butcher • Comfortable working in cold rooms and chillers Day to day you will keep HACCP hygiene records and sanitise the block and tools; break down beef, mutton and chicken carcasses into primal cuts; take customer orders and advise on cuts and cooking; run the band saw to cut cleanly through bone; sharpen and hone knives on a steel and whetstone; portion steaks, chops and cutlets to the ordered weights.
