Requirements: • Able to identify primal cuts of beef, mutton and poultry • Comfortable working in cold rooms and chillers • Clean, presentable and friendly at the counter The role involves weigh, price and label cuts for the display case; debone shoulders, legs and loins with a boning knife; trim fat, sinew and silver skin off the cuts; portion steaks, chops and cutlets to the ordered weights. 3+ years on the tools preferred.
