Head butcher • Wyoming County, West Virginia

We are recruiting: we are hiring a head butcher in Wyoming County, West Virginia. You will be based at a wholesale meat market. On the job you will handle: • Trim fat, sinew and silver skin off the cuts • Vacuum-pack and wrap customer orders • Dress the chilled counter and rotate stock by date • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts • Debone shoulders, legs and loins with a boning knife Ideal candidate: • Able to use a band saw, grinder and sausage filler • Physically fit to lift carcasses and stand all day • Food hygiene / HACCP certificate Full-time, day shift.
