Great opportunity: we are hiring a sausage maker in El Dorado County, California. The job is in a hotel or restaurant butchery. Day to day you will run the band saw to cut cleanly through bone; season and marinate meat on request; break down beef, mutton and chicken carcasses into primal cuts; debone shoulders, legs and loins with a boning knife; sharpen and hone knives on a steel and whetstone; take customer orders and advise on cuts and cooking. You should have: • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry At least 6 year(s) in a similar role.
