Requirements: • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required • Quick and accurate on the weighing scales and order maths You will trim fat, sinew and silver skin off the cuts; break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; monitor chiller and freezer temperatures to keep the cold chain; debone shoulders, legs and loins with a boning knife; mince meat and prepare keema on the grinder.
