You should have: • Clean, presentable and friendly at the counter • Comfortable working in cold rooms and chillers Day-to-day duties: • Debone shoulders, legs and loins with a boning knife • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Take customer orders and advise on cuts and cooking • Weigh, price and label cuts for the display case Rotating shifts.
