Urgent requirement: we are hiring a meat trimmer in Cheyenne County, Colorado. You will be based at a busy retail butcher's shop. You should have: • Physically fit to lift carcasses and stand all day • Quick and accurate on the weighing scales and order maths • Comfortable working in cold rooms and chillers Day to day you will season and marinate meat on request; break down beef, mutton and chicken carcasses into primal cuts; mince meat and prepare keema on the grinder; weigh, price and label cuts for the display case; portion steaks, chops and cutlets to the ordered weights; trim fat, sinew and silver skin off the cuts.
