Day to day you will weigh, price and label cuts for the display case; break down beef, mutton and chicken carcasses into primal cuts; debone shoulders, legs and loins with a boning knife; stuff and link fresh sausages with casings; keep halal cuts separated and clearly handled; monitor chiller and freezer temperatures to keep the cold chain.
