Now hiring: we are hiring a meat trimmer in Leake County, Mississippi. You will work in a hotel or restaurant butchery. You will portion steaks, chops and cutlets to the ordered weights; weigh, price and label cuts for the display case; sharpen and hone knives on a steel and whetstone; dress the chilled counter and rotate stock by date; season and marinate meat on request; run the band saw to cut cleanly through bone. You should have: • Knowledge of halal slaughter and handling where required • Able to use a band saw, grinder and sausage filler • Able to identify primal cuts of beef, mutton and poultry 5+ years on the tools preferred.
