On a typical shift you will top up detergent and rinse aid and check wash and sanitise temperatures; scrub out grease traps and clear blocked drains and gullies; hand-wash pots, pans and trays using the three-sink wash-rinse-sanitise method; mop the floors and wipe down kitchen surfaces and splashbacks; clean, drain and descale the dish machine at the end of each shift; polish glasses and cutlery and stack them ready at the pass.
