Now hiring: we are hiring a bread and bun maker in Coosa County, Alabama. The job is in a hotel pastry kitchen. Day to day you will check finished products for colour, crumb and weight; prove dough in the proofer at the right temperature and humidity; score the top of loaves before baking; roll out short-crust and biscuit dough; weigh and mix flour, yeast, water and salt to the day's recipe; knead and develop dough by hand and in the spiral mixer. Ideal candidate: • Able to work early-morning and night shifts • Knowledge of dough fermentation and proving • Able to lift 25 kg flour sacks Six days a week, one day off.
