Ideal candidate: • Familiar with deck, rack and convection ovens • Knowledge of dough fermentation and proving The role involves proof and fry doughnuts, then glaze them; prove dough in the proofer at the right temperature and humidity; shape loaves, rolls, baguettes and buns by hand; score the top of loaves before baking. 1+ years on the tools preferred.
