The role involves: • Rotate stock and follow FIFO on raw materials • Shape loaves, rolls, baguettes and buns by hand • Proof and fry doughnuts, then glaze them • Score the top of loaves before baking You should have: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes • 2+ years' experience as a baker Freshers welcome — about 3 years of practice is enough.
