Immediate opening: counter butcher (North Carolina)

Great opportunity: we are hiring a counter butcher in Wilson County, North Carolina. Your main tasks: • Keep HACCP hygiene records and sanitise the block and tools • Weigh, price and label cuts for the display case • Sharpen and hone knives on a steel and whetstone • Monitor chiller and freezer temperatures to keep the cold chain • Break down beef, mutton and chicken carcasses into primal cuts Requirements: • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling • Food hygiene / HACCP certificate Freshers welcome — about 6 years of practice is enough.
