On the job you will handle: • Knead and develop dough by hand and in the spiral mixer • Check finished products for colour, crumb and weight • Laminate puff and croissant dough by folding in the butter • Score the top of loaves before baking • Grease and clean baking trays, tins and moulds Requirements: • Understanding of food-safety and HACCP basics • Knowledge of dough fermentation and proving 5+ years on the tools preferred.
