Now hiring: we are hiring a head baker in La Crosse County, Wisconsin. You will be based at a neighbourhood confectionery. What we are looking for: • Accurate at weighing and following recipes • Familiar with deck, rack and convection ovens Day-to-day duties: • Check finished products for colour, crumb and weight • Laminate puff and croissant dough by folding in the butter • Rotate stock and follow FIFO on raw materials • Roll out short-crust and biscuit dough 3+ years on the tools preferred. $200 per day, negotiable for the right hands.
