We are recruiting: we are hiring a counter butcher in Atoka County, Oklahoma. On a typical shift you will trim fat, sinew and silver skin off the cuts; mince meat and prepare keema on the grinder; break down beef, mutton and chicken carcasses into primal cuts; run the band saw to cut cleanly through bone; weigh, price and label cuts for the display case; take customer orders and advise on cuts and cooking. Requirements: • Physically fit to lift carcasses and stand all day • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry Rotating shifts.
