The role involves: • Sharpen and hone knives on a steel and whetstone • Keep halal cuts separated and clearly handled • Weigh, price and label cuts for the display case • Debone shoulders, legs and loins with a boning knife • Mince meat and prepare keema on the grinder • Keep HACCP hygiene records and sanitise the block and tools Requirements: • Quick and accurate on the weighing scales and order maths • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required At least 3 year(s) in a similar role.
