Ideal candidate: • 2+ years experience working as a butcher • Able to use a band saw, grinder and sausage filler You will season and marinate meat on request; trim fat, sinew and silver skin off the cuts; debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date; keep HACCP hygiene records and sanitise the block and tools; monitor chiller and freezer temperatures to keep the cold chain.
