The role involves: • Trim fat, sinew and silver skin off the cuts • Mince meat and prepare keema on the grinder • Dress the chilled counter and rotate stock by date • Vacuum-pack and wrap customer orders • Break down beef, mutton and chicken carcasses into primal cuts You should have: • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day Freshers welcome — about 5 years of practice is enough.
