Head butcher — Jim Wells County

Urgent requirement: we are hiring a head butcher in Jim Wells County, Texas. You will be based at an abattoir or slaughterhouse. Requirements: • Confident knife skills and safe blade handling • Food hygiene / HACCP certificate On a typical shift you will trim fat, sinew and silver skin off the cuts; stuff and link fresh sausages with casings; break down beef, mutton and chicken carcasses into primal cuts; sharpen and hone knives on a steel and whetstone; take customer orders and advise on cuts and cooking.
